It’s lunch time, or worse yet way past lunch time, and you’re starving but there’s nothing to eat in the house. Anyone else face this dilemma? Lunch has always been my trickiest meal of the day. I can eat the same thing for breakfast every morning, and I do pretty well at scheduling dinners out; but during the day, it’s usually just me at home, in the midst of working/running around. Taking time to stop and make myself something to eat doesn’t usually fit into the schedule. BUT! The past few months, I’ve found 3 tried and true lunches that work! My only criteria is that they be somewhat healthy, quick to pull together (like 5 minutes or less) and easy to eat on the go. Bam.
01 // TJ’s Rosemary Ham Roll Up w/ Sandwich Pickle, String Cheese + Yellow Mustard + If you haven’t picked up Trader Joe’s Rosemary Deli Ham, do yourself a favor and grab it next time you’re there. It’s a favorite around here (also great rolled and sliced up on a cheese board). These are pretty much all of my favorite lunch flavors right here. The sandwich pickle is pretty essential (they’re sliced lengthwise to lay flat.) I like to split a cheese stick in half between two slices of meat, pair with two pickles and you’re golden.
02 // TJ’s Vanilla Bean Greek Yogurt Cup w/ GF Pecan Praline Granola + This granola is my new Trader Joe’s obsession. I literally can’t stop eating it. Shhhhh. I love making a little parfait for lunch with yogurt, a handful of granola and maybe some fresh berries or sliced bananas sprinkled on top. Slightly sweet and oh so refreshing.
03 // Tuna Salad w/ Mayo, Dill + Hardboiled Egg + Ok, so this one is a bit more time intensive, but it’s still pretty quick and a very satisfying meal. I like the white albacore tuna in water from Trader Joe’s, with a dollop of their mayo, sprinkle of dried dill and a diced hardboiled egg. Pro Tip : Trader Joe’s sells a bag of already hard-boiled eggs in the dairy section which are perfect for this. You can serve on a lettuce leaf as a wrap, or I also like to spread it on a piece of GF toast and melt cheese on top if I have the time. You can also just eat it right from the bowl!

Oooo gotta try that ham! My favorites are a salad of arugula, feta, lentils (pre-cooked/packaged from TJs), beets (also from TJs), and homemade goddess dressing. If I have these things on hand I’ll eat this every day. My other go to for the week is tuna, white beans, olive oil, salt/pepper, lemon juice and green onions. I make a big batch of it and scoop it onto salad greens each day. So good and super easy.
