Caramelized Pork Tacos w Pineapple Salsa
notes : used pork tenderloin and omitted the jalapeno. two thumbs up.

notes: quick, easy, winning. i used TJ’s frozen corn.

WEDNESDAY //
Simple Summertime Basil Chicken Curry
notes: used frozen corn and TJ’s thai red curry sauce. omitted jalapeno + cilantro. sometimes these half baked harvest recipes need just a bit of editing 😉 super colorful, flavorful and fresh. this was a keeper.
Basil Ginger Coconut-Lime Rice
notes: omitted the ginger. also, her rice cooking method is the best.
THURSDAY //
California Chicken, Veggie, Avocado + Rice Bowls
notes: this recipe is a stand-by around our house.
I typically just grill the chicken without skewering (the marinade is delicious.)
I prefer the convenience of cooking the veggies on my grill pan.
Subbed gorgonzola cheese for the blue.
To simplify, use pre-made guacomole
FRIDAY //
Burgers + Fries (TJ’s frozen section)
Salad w Spring Garden dressing
notes: this dressing is so fresh and yummy. think a healthy version of ranch 🙂
SATURDAY //
date night. ordered pizza for the kids.
SUNDAY //
Hearty Tomato Soup w Lemon + Rosemary
notes: omitted the red pepper to keep it mild for the kids.
The lemon creme fraiche is a MUST 🙂
