It’s been a bit of a hiatus here, but I’m happy to announce that menu monday returns today! Excited for to be cooking again, and seeing life settle into the comfortable rhythm of routine. If you’re looking for meal inspiration, I save all of the recipes I’m making each week on this pinterest board. Here’s what we ate last week!
SUNDAY //
Slow Cooker Teriyaki Pork Bowls w/ Lime Juice Coleslaw + Coconut Rice
notes: love a good slow cooker sunday lunch. such a great medley of flavors that’s pretty easy to pull together. love!
MONDAY //
Skillet Moroccan Chicken w/ Tomatoes, Peaches + Feta
notes: this is one of those – i would never have thought to put these flavors together, but it just works – recipes. made with white wine, and definitely recommend going that route. will def make this again before summer is officially through.
On the Side : Parmesan Couscous, Roasted Broccoli
TUESDAY //
Burgers and Hot Dogs

WEDNESDAY //
Date Night : Kids had Spinach Hamburger Loaf and Applesauce
notes: super easy weeknight meal : brown 1 lb ground beef. when cooked through, sprinkle with s/p, oregano and cinnamon. add 1/2 can of tomato sauce. flatten two balls of trader joe’s pizza dough into a giant rectangle. down the middle, layer shredded mozzarella cheese, frozen spinach and the ground beef. wrap in all four edges of the rectangle to form a giant “loaf”. make sure to seal all edges to prevent leaking. bake at 425 for 15+ minutes or until golden brown. slice and serve!
THURSDAY //
Prosciutto Chicken Parmesan w/ Garlic Butter Tomato Pasta
notes: such a great alternative to the typical spaghetti and meatballs dinner and this one was DELICIOUS. the chicken wrapped in proscuitto was a particular star of the meal. I used whole wheat spaghetti instead of linguine. will definitely be seeing this one in heavy rotation this fall/winter.
