Everybody is at home, baking bread according to the lack of yeast in stores these days… Crazy times. In an attempt to cut back on unnecessary travel, I made a meal plan for two weeks and did a massive Aldi trip last Monday. Washington’s Green Grocer is keeping us stocked up on fruits and veggies (we do the Large Mixed Box). I am also LOVING Target’s Drive Up feature — order through the app and park for a contact-less same day pick-up. We’ve even gotten the kids involved in cooking dinner 3x over the next two weeks, which is a nice break from the constant kitchen time. We are halfway through, and I’m not quite sure if we are going to make it without an emergency trip; but so far, so good. For your inspiration, here’s what we’re eating…
TWO WEEKS OF DINNERS

NYT Bolognese / French Bread / Mixed Green Salad
This was delicious. I’m always won over by a good long-simmered veggie full sauce.
TUESDAY
BBQ Chicken Tacos / Chips+Salsa
Perennial favorite in our house.
WEDNESDAY
Healthy Tuscan Chicken Pasta / Homemade Focaccia Bread / Caesar Salad (Madi made)
Rave reviews from all.
THURSDAY
Easy Biscuit Chicken Pot Pie / Cinnamon Apples (Julia made)
Super easy and another hit with the kids.
FRIDAY
Blackberry Basil Ricotta Pizza
LOVED this. I made it on the naan bread from Aldi.
SATURDAY
Asparagus Frittata / Fruit Salad / Buttered Toast
Delicious!
SUNDAY
Easter Dinner | Honeybaked Ham, Sweet Potato Casserole, Mom’s MacnCheese, Green Beans, Deviled Eggs, No Yeast Rolls (that were a total flop)
