Sweet summertime is here, and while it’s going to look different this year, I’m ready for it. Give me all the fresh summer bounty. Here’s what we ate last week…
SUNDAY //
Peach Burgers / Fries / Veggies + Dip
notes: these burgers are one of our all time fav summertime dinners. Definitely make the peach mayo!
MONDAY //
Pork Rice Bowls w/ Pickled Cabbage / Egg Rolls / Melon
notes: Got a huge head of red cabbage in our Green Grocer box last week, so I whipped up this pickled cabbage which was super easy and such a yummy addition to these bowls. I used ground turkey instead of pork and omitted the fish sauce and bok choy. A great weeknight meal.
TUESDAY //
Cauliflower Rice Chicken Asada Bowls w/ Mango Salsa
notes: Used chicken instead of steak and the marinade was just as delicious. I mixed brown rice with the riced cauliflower for a little extra bulk. Loved this bowl full of flavors.
WEDNESDAY //
Date Night | Kids had Meatballs Stroganoff / Egg Noodles
THURSDAY //
Greek Tacos / Veggies + Hummus
notes: greek flavors and summertime just go together so well. This meal was a find from last year that has become a favorite.

Pizza / Breadsticks
