We made it through another two weeks… I feel like we are finally finding a good rhythm, and all of this somehow is starting to become our new “normal”. Here’s another two weeks of menu plans!
SUNDAY
Hawaiian Carne Asada Fries / Crispy Brussels w/ Garlic Bacon Aioli
notes: these fries were delicious. We grilled up the steak and served everything on the side for MYO fries. The leftover pineapple salsa was incorporated into the tacos for Tuesday…
MONDAY
Greek Pasta w/ Chicken / Naan / Easy Kale Salad
notes: loved this flavorful alternative to spaghetti and meatball night with a greek twist. Also, this kale salad is my new favorite. I like to make it sans dressing – and with some lemon zest instead.
TUESDAY
Blackened Chicken Tacos w/ Pineapple Salsa / Rice
notes: these were fresh and yummy and a bright spot in a week of otherwise pretty crummy weather.
WEDNESDAY
Ham/Turkey Everything Bagel Sandwiches / Chips + Grapes
notes: made by one of my girls, while James and I escaped for a parking lot/take-out date night.
THURSDAY
Creamy Rosemary Chicken Pasta / Rustic Rosemary Bread / Green Beans
notes: dinner by daughter #2. this was a hit with the whole fam.

notes: the weather here has been FREEZING, so I adjusted our scheduled dinner of BBQ sausage kebabs to this cozy sausage/roasted veggie bake instead.
