Hi Friends. Here we are, headed into week 7 of being homebound… as we take life one day at a time, time marches on and one week rolls into the next and we look back to see we made it through. Funny how that happens. I’m grateful I didn’t know back on March 13 how long this would last. We still don’t. There’s not grace for that now. But there is new mercy for each morning. Meal planning has been both my creative outlet and sanity-saver. Food is one of the things we get most excited about around here… Here’s another two week plan for ya… We’re halfway through currently, so I’ve included notes on what we’ve eaten already…
SUNDAY //
Halfbaked Harvest Stuffed Spinach Artichoke Soft Pretzels / Veggies + Dip
notes: not gonna lie, these were time intensive, but they sure were delicious, so i guess well worth the effort!
MONDAY //
Sage Lemon Butter Chicken Piccata over Cauliflower Mash / Honey Balsamic Brussels
notes: one of the things halfbaked harvest does best is combine the most sumptuous flavors to meld together into a plate that is really wonderful. This recipe is a classic example of that and one of my favorites from her. Definitely make the cauliflower and you will probably be able to pull one over on your fam with its creamy goodness.
TUESDAY //
Julia Cooks | BLT Tacos / Homemade Fries
notes: one of those super simple meals that is perfect for a weeknight when you really don’t want to cook.
WEDNESDAY //
Easy Spinach Baked Ziti / Garlic Bread
notes: the lemon ricotta concoction you whip up to spread through this pasta dish really brings it over the top. This gooey flavorful pasta dish is just the right kind of comfort food for days like these.
THURSDAY //
Madi Cooks | Garlic Butter Shrimp Pasta / Salad / French Bread
notes: for a house split between seafood lovers and not, this pasta dish was easily adapted – we served the shrimp on the side and combined the pasta with the sauce for everyone else.

Lemon Ricotta Pancakes w/ Blueberry Syrup / Eggs / Bacon
notes: if you make one thing from this post, make these pancakes. I’m not even a big fan of pancakes, but these were over the top good. Definitely must top with the blueberry syrup and a sprinkle of powdered sugar. Mmmmmm.
SUNDAY //
Party Size Italian Melt / Chips+Dip / Veggies
notes: yet another halfbaked harvest winner. I added a slice of TJ’s rosemary ham in place of the pepperoni. The dressing, all the gooey cheese and meats. Flavor explosion in your mouth, yes please and thanks.
MONDAY //
Sheet Pan Lemon Rosemary Dijon Chicken & Potato w/ Feta Goddess Sauce / Couscous
notes: this was one of those yummy all-in-one meals. Feta sauce was definitely the star.
TUESDAY //
Black Bean / Brown Rice Skillet / Chips + Guac
notes: I like to get Trader Joe’s frozen brown rice for this recipe which makes it super quick and easy (I also used TJ’s fire roasted red pepper). We like to have this served in bowls topped with guac and sour cream and chips on the side for a hearty alternative to taco tuesday.
WEDNESDAY //
Boys Cook | Copycat CFA Nuggets / Fries
notes: these were time intensive with the frying of the nuggets, but definitely tasted like the real thing. We also found a recipe for Copycat ChickFilA sauce that was so good we made two batches.
THURSDAY //
Sun Dried Tomato/Ricotta Meatballs on Linguine / Roasted Green Beans
notes: love this healthy lighter version of spaghetti and meatballs. Enjoyed on a cold rainy night.
FRIDAY //
White Pizza w/ Spinach and Bacon
notes: I made this on large pieces of Naan and it was a super quick and easy dinner to pull together for our Friday pizza night. Delish!
SATURDAY //
