Fall is here to stay and it is delicious. Life has been super crazy and I’ve been working on making mealtime as easy as possible. Here’s what we ate last week!
SUNDAY //
Slow Cooker Parmesan Chicken + Orzo
Oven Roasted Green Beans
Oatmeal Molassas Bread
notes: this slow cooker chicken + orzo is one of my favorite comfort foods – especially on a rainy day like last sunday was. The oatmeal molassas bread too, is one of my all-time favs of fall. I omit the raisins and extra oats. Love that it makes two round loaves – you can eat one and freeze the other for another meal.
MONDAY //
Crockpot Beer Chicken, Mashed Sweet Potatoes, Peas
notes: super easy and tasty chicken. This was a basic meal on a night when I was too tired to do much else.
TUESDAY //
Crockpot Homemade Minestrone
No Knead Rosemary Bread
notes: this soup was great — so many veggies, I actually couldn’t fit it all in my slow cooker and ended up skipping adding the green beans and spinach at the end. I also omitted the pesto because I couldn’t find it. Will definitely be making this again this winter! I screwed up on the timing of the bread and wasn’t able to let it rise as long as it should have and it showed – super dense. Baker, I am not 🙁
