It’s a cold rainy Sunday afternoon as I’m typing up this post, and we are warm and cozy inside. I do think that fall food might just be my favorite… Here’s what we ate last week :
SUNDAY //
Honey Apple Cheddar + Bacon Panini + Trader Joe’s Tomato Soup
notes: I bought TJ’s already cooked bacon (in the deli section) to make this easy. I did not have apple butter, so I used the Apple Cider Jam from Trader Joe’s which was a little too sweet for my liking. Overall, though a yummy combo. And TJ’s tomato soup is forever my favorite grilled cheese companion.
MONDAY //
Gnocchi w/ Pomodoro Sauce
notes: this herb infused homemade pomodoro sauce was super delicious, and I love the change of pace that serving it with gnocchi provides instead of the usual pasta. I like TJ’s gnocchi available in the pasta section.
Autumn Kale Salad : swapped out the goat cheese for some feta and this salad was a winner for me. Yummy dressing recipe too.
TUESDAY //
Crispy Baked Black Bean + Sweet Potato Tacos
notes: we are trying to eat less meat around here and you really don’t miss it with these tacos. I used the white corn tortillas from TJ’s and honestly, they fell apart a little too much. I’m going back to flour tortillas next time. DEFINITELY make the fresh avocado salsa. The combo of the two is winning.
