May is kicking my butt, but we leave for the beach on Saturday so there is a happy end in sight 🙂 Here’s what we ate last week!
MONDAY //
Garlic Butter Pasta + Herbed Pork Bolognese
notes: pasta mondays forever… this recipe is a full dinner on a plate and will forever be a favorite of ours.
TUESDAY //
Buffalo Chicken Tacos w/ Blue Cheese Cilantro Ranch
notes: found this recipe last summer and forgot how delicious it was. the dressing alone merits making this recipe. definitely will make again!
WEDNESDAY //
Date Night | Kids had Spinach Hamburger Loaf
notes: a fav from when i was a kid : flatten out 2 bags of trader joes pizza dough into a big rectangle and fill with seasoned ground beef, shredded mozzarella, and frozen thawed spinach. Fold in sides to create a giant “loaf” and bake at 425 for 15 minutes or until crust is golden brown.
THURSDAY //
Coconut Crunch Chicken Strips w/ Honey Mango Dipping Sauce
ON THE SIDE : Rice, Asian Slaw
notes: frying intimidates me big time, so for this recipe, I just fried up these strips enough so that they were golden brown on each side and then baked everything at 375 for another 15 minutes or so to make sure it was cooked through. Served with an asian slaw kit (thanks Aldi) and rice. Definitely make the mango dipping sauce. The flavor combo with everything here is just so amazing.
