Spring has definitely arrived, and we can’t get enough. Here’s what we ate last week…
MONDAY //
Basil Chicken Parmesan Bolognese w/ GF Pasta + Salad
notes: halfbaked harvest never lets me down. this is a fresher alternative to the typical spaghetti night. I forgot to buy ground chicken so I just diced up some boneless chicken breasts really small, and it worked just fine. Also, skipped the mozzarella on top – parmesan is cheese enough for us!
TUESDAY //
Greek Bowl w/ Meatballs + Tzatziki over Quinoa + Mini Naan from Aldi
notes: no secret I love these bowl dinners (one and done!), and this is a winner. I used quinoa in place of the couscous, just because that’s what I had on hand – also it’s GF…
WEDNESDAY //
Date Night | Kids had Nuggets + Aldi Shell Mac n’ Cheese
THURSDAY //
BBQ Brat Kebabs / Rice / Melon
notes: a fav from last summer. This is so easy – I like to make with the Never Any sausages from Aldi.
FRIDAY //
Mexican Street Corn Soup / Chips+Guac
notes: we were supposed to have tacos, and it was such a cold rainy night, I made a game-time decision to make this street corn soup instead. Topped it with bacon, cotija cheese + avocado. Delicious.
