We avoided the latest winter storm front and there are the tiniest hints of spring if you look close… Welcome March! Here’s what we ate last week…
MONDAY //
Trader Joe’s Sausage/Gnocchi Dinner Hack
Steamed Veggies
TUESDAY //
Lemon Chicken/Orzo Soup
Oatmeal Molasses Bread
notes: the soup was perfect for a cold, rainy night; but honestly the bread is the star here. One of our all-time favorites, and makes two loaves, so you can eat one and freeze the other.
WEDNESDAY //
TJ’s Mandarin Orange Chicken/Rice
THURSDAY //
Vietnamese Beef + Crunchy Rice Bowls + Egg Rolls
notes: this was a surprising hit with the kids — the crunchy rice definitely takes it to another level of goodness. Love these bowls where you get a lot of fresh flavors in the wintertime. Also, I just used stew beef for the meat and chopped it up small… tasted great.
FRIDAY //
Make Your Own Pizza + Salad
SATURDAY //
Out
SUNDAY //
Feel Good Ramen w/ Sweet Potatoes + Crispy Shallots
notes: this is a favorite. Used red onions instead of shallots here, and it worked just fine. Such a cozy bowl of goodness.
