notes: one of my all-time fav bolognese recipes. I was out of vodka and subbed red wine – just as tasty. Also, I went with the stove top method instead of slow cooker. So easy!

One Pan Roasted Pork w/ Sweet Potatoes + Apples
notes: your basic weeknight dinner. Nothing fancy, but gets the job done. I skipped the pear on this one.
