There’s snow in the forecast again this week for the winter that just keeps on keeping on. We are staying cozy here and eating good. Here’s last week’s menu :
MONDAY //
Parmesan Polenta w/ Pork Raghu
Arugula Parmesan Salad w/ Lemon Vinaigrette
notes: This is a bowl of comfort food at its finest. I love the substitution of polenta for spaghetti for a change of pace. The simple ingredients of the salad is the perfect side.
TUESDAY //
Beef Bourguignon / Crusty Bread
notes: This recipe is based off of Julia Child’s infamous dish. I went the stovetop/oven method and it was wonderful to have this simmering in my oven for three hours on a rainy cold afternoon. Delicious.
WEDNESDAY //
Date Night | Kids had Chicken Nuggets + Mac n’ Cheese
THURSDAY //
Valentines | Filet Mignon, Roasted Potatoes, Green Beans
FRIDAY //
Crockpot Chili / Hot Dogs
Grapes + Carrots w/ Ranch Dip
notes: Just a simple weeknight meal – you can have chili, you have a hot dog, or you can make a chili dog. Something for everyone…
SATURDAY //
Pizza + Caesar Salad
SUNDAY //
Slow Cooker Chicken Noodle Soup
Pesto Artichoke Havarti Grilled Cheese
notes: Pretty standard chicken noodle soup recipe here. Love that it could be simmering and cooking while we were at church. Let me just say the star of the show here is the grilled cheese. Definitely make sure that you add the sprinkle of sea salt at the end — it finishes these sandwiches off perfectly.
