Kids are home with another two hour delay today, and currently there is an intense nerf gun battle happening around me. Ah winter… Here’s what we ate last week :
MONDAY //
Crispy Thai Pork w/ Cucumber Salad + Jasmine Rice
notes : I used ground beef instead of pork and omitted the chiles + fish sauce. This is a bowl of fresh flavors and goodness. The kids love it.
TUESDAY //
Greek Chicken Souvlaki w/ Rice Pilaf
notes: a year round favorite of ours. I like to do the veggies in a grill pan to keep them from falling apart. Love the mini naan from Aldi to sop up the leftover feta tzatziki. Give me all the greek food please.
WEDNESDAY //
Date Night | Frozen Lasagna + Peas
THURSDAY //
Rigatoni Broccoli Bake + Texas Toast
notes: I used regular broccoli and skipped the pancetta. While not the healthiest dish in the world, don’t you sometimes just need a bowl full of gooey cheesy pasta goodness in the winter? This fits the bill perfectly.
FRIDAY //
Homemade Pizza
Avocado Kale Caesar Salad / Sweet Potato Fries
notes: something about the combo of the avocado kale caesar and sweet potato fries was an unexpectedly delicious pairing. Next time, I’ll grill up some chicken and make this a complete meal. I foresee this on the menu a lot in the future… (hello perfect summer dinner!)
SATURDAY //
Spinach Feta Artichoke Bake
Raspberry Almond Scones
notes: have always loved this super simple breakfast bake. Easy to whip up on a Saturday night. And these SCONES! Amazing. I left out the almond extract for the dough, but included it in the icing and it was just the right amount of flavor for me. Also, I used frozen raspberries instead of fresh. We will be making these again, for sure!
SUNDAY //
30 Minute Garlic Butter Pasta, Kale + Herbed Pork
notes: probably one of my all-time favorite halfbaked harvest recipes. Super quick and easy to throw together. Sometimes I do the garlic pasta, and sometimes I just do regular pasta and honestly don’t find a big difference either way. I like the peppercorn pork tenderloin from Aldi for this.
