It’s sunny, breezy and in the upper 60s today which is a far cry from the snow, ice and frigid temps of last week. We are soaking it up as much as possible. Also, I used Instacart for Aldi this week, and it just may be my favorite new life hack for crazy busy weeks. Three cheers for modern conveniences. Here’s what we ate last week :

TUESDAY //
One Pot Chicken + Sage Dumplings
Kale Apple Salad
notes: a solid chicken and dumplings recipe (i used boneless skinless); but the real winner here was the kale salad with honey dressing. so good.
WEDNESDAY //

TJ’s Dinner Hack : Sausage + Sweet Potato Gnocchi
notes: can’t go wrong with this super quick, super yummy one pot dinner.
FRIDAY //
Feel Good Ramen w/ Sweet Potatoes + Crispy Shallots
Egg Rolls
notes: LOVED this, and received rave reviews from the kids. i make a lot of halfbaked harvest recipes, and have to say the key is to know when to edit the ingredients down. I rarely have everything she calls for. Here I omitted the chili paste and mushrooms (and sesame seeds and green onion garnish). So good.
SATURDAY //
Eggs/Hashbrowns/Citrus Smoothie/Box Blueberry Muffins
notes: another edited recipe. I skipped the beets, ginger and spices. Kids loved it.
SUNDAY //
Slow Cooker Salsa Verde Honey Lime Chicken Tacos / Rice / Chips + Salsa
notes: made this and served on regular tortillas. The chicken flavor is so great.
