Halfway through crazy busy season and we’re still getting dinner on the table, so that is a win in my book. Thank you slow cooker for keeping me sane. Here’s what we ate last week…

Fire Roasted Tomato & Italian Sausage Grinders
notes: these are easy to throw together (thank you crockpot) and delicious too. Definitely want to save that fire roasted tomato sauce for dipping these in. I like to use 1 regular and 1 fire roasted can of diced tomatoes for the kids.
on the side : Fries, Veggies + Dip
MONDAY //
White Bean Turkey Chili over Arugula w/ Tortilla Chips
notes: This is a nice alternative to a tomato-base chili. I like to make my own cream of chicken soup for this recipe. Serve over arugula with tortilla chips and you have a complete meal.
TUESDAY //
Honey Chipotle Chicken Tacos w/ BLT Slaw
notes: If you make these for the slaw alone, you won’t be sorry… The honey chipotle chicken marinade is really really yummy too.
WEDNESDAY //
Date Night : Kids had chicken nuggets + mac n cheese
THURSDAY //
Parmesan Herb Chicken Orzo
notes: Slow cooker coming up huge this week… this is one of my all-time fav crockpot recipes. You cook the chicken and herbs all day. Throw the orzo in at the end, melt parmesan over everything and it’s a bowl of warm gooey comfort food.
on the side : roasted green beans, biscuits
