Happy first day of October! Fall is in the air, and I’ve decided this is my favorite meal planning season… Enjoy!
SUNDAY //
Sawyer’s Bday! | Spaghetti + Everyday Meatballs, Caesar Salad, Garlic Bread
notes: this was Sawyer’s special request and I was happy to oblige. This meatball recipe is my all-time favorite. I skipped the homemade sauce, baked these guys at 425 for 15 minutes and dropped them to simmer in 2 jars of spaghetti sauce before serving.
MONDAY //
Roast Veggie/Sausage/Penne Bowls
notes: Love a good bowl dinner, and the flavors in this one are winning. On a side note, I have to say that I am loving Aldi’s Never Any… Sausages (in the deli section). I used the sweet apple chicken sausage for this recipe and it was delish. Also, their organic gluten free penne pasta is great too! And I went with the jarred pesto in the spaghetti sauce/pasta section. Will make this again!
TUESDAY //
Slow Cooker Black Bean Enchiladas, Easy Lime Slaw, Rice
notes: I have to admit that I was skeptical that 1) enchiladas would be good cooked in a crockpot, and 2) that my family wouldn’t miss the meat; but I was wrong on both counts. Apart from the bottom layer being a little soggy, these were DELICIOUS! I used the regular jarred mild salsa from Aldi (2 jars), and monterey jack cheese (with some cheddar sprinkled on at the end). Also, love Aldi’s flour tortillas. They sell a pack of 20 smaller sized for around $2, and it’s perfect for our crew. I had a head of cabbage and some carrots that I shredded in my food processor to make a slaw (seasoned with salt, pepper and juice from one lime). Added some nice freshness to the crockpot meal.
WEDNESDAY //
Cheesy Hamburger Noodle Casserole, Peas
notes: This is a classic recipe my mom made growing up… Brown 1 lb ground beef. Season with salt and pepper, and add one small can of tomato sauce. Cook a package of egg noodles, and line the bottom of a 9×13 pan with them. Then layer ground beef over top of noodles. Combine 1 c. sour cream and 1 c. cottage cheese and spread over ground beef. Top with shredded cheddar cheese and bake at 350 for 20 minutes or until cheese is melted. An all-time favorite of our family…
THURSDAY //
Apple Mustard Glazed Pork Tenderloin, Creamy Spinach Bake
notes: Love when simple ingredients combine to make a dish so flavorful and tender. This pork was absolutely delicious, and can’t go wrong with creamed spinach. This might have been one of my favorite/easiest creamed spinach recipes I’ve made.
FRIDAY //
Gnocchi Bolognese Bake, Roasted Green Beans, Garlic Bread
notes: This is like the perfect cozy fall meal in my opinion… Used Trader Joe’s gnocchi (a 16 oz pack is like $1.69)… Served this over leftover spaghetti noodles for the little kids, and in bowls for the bigs and grown-ups. The bread was perfect to sop up all the saucy goodness. Roasted some fresh green beans/olive oil/s+p in the oven with it while it was cooking. Perfect weeknight italian plate of goodness… Will make this one again!
