Sawyer goes back to school today (finally!), and I feel like I’m about to get a new lease on life with 4 whole hours every day to work and plan and play. I’ll miss my sidekick, but so looking forward to some fresh mental space 🙂 We are at that time of year half-way between summer and fall. Menu plan accordingly. Here’s what we ate last week…

Halfbaked Harvest Chili w/ Cornbread, Veggies + Dip
notes: Mmmmmm couldn’t wait to break out the slow cooker to make this chili again — a favorite from last winter. I like that it is a bean-less option, but will occasionally throw a can or two in for more substance.
TUESDAY //
BBQ Chicken + Roasted Sweet Potato Bowls
notes: Love a simple sheet pan supper… I like to cook my chicken separate from the potatoes and veggies. This is an easy one to throw together and perfect for a weeknight.

Greek Chicken Power Bowls w/ Naan
notes: Can never get enough greek food… I like the addition of the crispy chickpeas for a little extra protein. Also, the naan in the bread section of aldi is SUPER yum.

Tequila Lime Chicken Nachos and Grapes
notes: Saturday night nachos forever. These were easy to throw together and a very satisfying, gather round the kitchen island meal after a full Saturday of work.
