We are finally starting to see some sunshine around here, and it’s pretty much the best. I’ve gotta say summer-time food is my fav. Here’s what we ate last week…

Greek Bowls w/ Meatballs over Couscous / Naan
notes: these were good, but I’m going to have to say I enjoyed last week’s version better. All in all, though, you can’t go wrong with greek! To make this GF, I made my own breadcrumbs with GF bread, and served over brown rice. Also, I doubled the meatball recipe to serve our crew.
TUESDAY //
Chipotle Lime Chicken + Sweet Potato Salad w/ Jalapeno Lime Vinaigrette
notes: this was DELISH. I omitted the chipotle peppers from the chicken marinade; but kept the jalapeno in the dressing. Will definitely be making this all summer long. A great tasting plate (and a great chicken marinade to boot!)
WEDNESDAY //
Date Night | Spinach Hamburger Loaf (browned seasoned gr beef, mozzarella cheese, cooked frozen spinach wrapped up in pizza dough in a loaf shape and baked at 425 for 15-20 minutes or until lightly golden).
THURSDAY //
Grilled Chicken Margherita / Roasted Green Beans / TJ’s Garlic Fries
notes: we were pushing almost 90 degrees on Thursday, and it was so nice being able to throw this chicken on the grill. Pretty basic recipe here, but good nonetheless.

Irish Breakfast Nachos / Carrots+Ranch / Grapes
notes: Just can’t get enough of these breakfast nachos! I used regular milk (I love the lactose free whole milk from Trader Joe’s!) in place of the evaporated and 16 oz shredded white cheddar for the cheese sauce. Just so good. All of it!
