We spent the weekend with our church in the hills of West Virginia. No cell service, little sleep and so much laughter and conversation and sweet times with friends. Dragginggggggg this morning, but oh so worth it. Here’s what we ate last week…
SUNDAY //
Best Crockpot Sweet Pulled Pork Sandwiches / Coleslaw / Sweet Potato fries
notes: I completely forgot how long this was supposed to cook, in addition to sleeping in Sunday morning. Oops! Thankfully, though I remembered seeing something about cooking crockpot recipes in a dutch oven instead and it was amazing! 3+ hours in the oven at 325 and it was more moist and flavorful than the slow cooker, in my opinion. I used half the recommended onion, and all of the sauce ingredients (it’s a lot of sweeteners, I know!); but really delicious. Think this will be my new go-to for bbq. Also, the slaw is a pretty basic recipe, but a good one. All in all, a great find!
MONDAY //
Sunday Sauce w/ Homemade Meatballs / Dr Weil’s Kale Salad
notes: just so you know, this is an all-day affair — plan accordingly! Also, it makes a huge vat of sauce and meatballs (we had lots of leftovers); so you might want to cook two boxes of pasta, to mix with the leftovers. Definitely worth the wait, if you have the time to simmer sauce all day!

Tacos / Roasted Corn / Chips+Salsa

Date Night | Kids had TJ’s frozen mandarin orange chicken/rice/egg rolls
THURSDAY //
Greek Chicken Power Bowls
notes: it’s no secret I’m a big fan of the “bowl” dinner, and when it’s a greek bowl – even better! These were delicious. I combined the tomato and cucumber salad. Will def be adding these into the rotation…
