It’s a cold, wet, rainy Monday here; but it was a glorious Friday/Saturday of 80 degrees and Sunday… The best foretaste of summertime, and we can’t wait. Here’s what we ate last week.
SUNDAY //
Tequila Lime Sheet Pan Chicken Nachos / Veggie Platter / Grapes
notes: Omitted the tequila, queso and used TJ’s Restaurant Style White Corn Tortilla Chips which have a hint of lime. The chicken on these were delicious. Add all the toppings and it makes for a very satisfying, great for hanging out, Sunday lunch.
MONDAY //
Slow Cooker Beef + Sweet Potato Stew / Steamed Broccoli
notes: Last Monday was cold, wet and rainy too, and this was the perfect dinner. I’m not always a fan of the slow cooker stew as it all tends up tasting the same, in my opinion. Not the case here. This was a flavorful bowl of goodness. Definitely will make again. Delicious.
TUESDAY //
Spicy Cider Braised Chicken Tacos w/ Sweet Chili Apple Pomegrante Slaw / TJ’s Slaw
notes: Omitted the chipotle chilis and in place of the beer/cider I used hard cider. I found I had plenty of sauce with the chicken and didn’t need to add the enchilada sauce. Definitely take the extra time to make the apple pomegrante slaw (I omitted the jalapeno). All in all this is a yummy alternative to the typical taco Tuesday and the kids loved it.
WEDNESDAY //
Date Night / Kids had Chicken Nuggets + Fries
THURSDAY //
Sheet Pan Sausage w/ Roasted Veggies / French Bread
notes: I did a mix of TJ’s apple and roasted garlic sausage. The veggies and spices and sausages were the best combination. Served with some crusty loaves of french bread, which some of the kids used to make sausage sandwiches. Another winner here.

Out / Kids had Chicken Patty Sandwiches + Annie’s Shell Mac n Cheese
