After a week off, I’m back with menu monday… We had the nicest spring break trip with my parents and brothers and sisters and all the cousins; but after three trips in the past six weeks, I’m still working on getting back into a routine, and also catching up from work… Such is life. Here’s what we’re eating :
SUNDAY

MONDAY
Easy Weeknight Bolognese / Arugula Parmesan Salad
notes: this just may become our monday night staple meal. With the sneaky addition of chopped veggies, combination of crushed tomatoes with jarred sauce, and lots of herbs this is a flavorful sauce that was perfect on a cold rainy night. Omitted the chicken bouillon, heavy cream and red pepper flakes. Served with our favorite arugula salad. Add a generous glass of red wine and you’ve got the best fix for the Monday blues.
TUESDAY
Honey Chipotle Chicken Tacos / Rice / Chips+Salsa
notes: BLT slaw. Need I say more? Oh my word these were yummy and will definitely be appearing on the menu again… I omitted the Bacon Chipotle Seasoning and used smoked paprika instead. Definitely make the crema and most definitely make the slaw. The combo of everything together is pretty delicious. Loved this recipe!

THURSDAY
Lemon Garlic Butter Steak w/ Zoodles / Applesauce / Glazed Carrots
notes: not gonna lie, underwhelmed with this one. Hard as I try to like zoodles, I really just don’t. The flavors on the steak were great and it did come together really easily. If I made it again, I might do a combo of cooked spaghetti noodles with the zoodles. I think the kids would probably appreciate that too 😉

Breakfast Egg Hash / Strawberries / Tj’s Cinnamon Sugar Muffins
notes: skipped the scallions on this one, but other than that, made this as-is and it was the yummiest thing I put in my mouth all week. Seriously. Comes together so easily with TJ’s staples and is a delicious take on breakfast for dinner. Making this again for sure!
