We are on spring break this week and headed to Kentucky tomorrow! Hoping the weather starts to get the message of the season, and we see some sunshine. Here’s what we ate last week…
SATURDAY //
Irish Breakfast Nachos / Fruit Salad
notes: I think this wins the award for best meal of the week. Seriously the combination of flavors here is just the BEST. Instead of the seasoned waffle fries, I did a mix of TJ’s handcut fries and sweet potato fries which was great. I used regular milk in place of the evaporated (BTW have you tried TJ’s lactose free milk yet? It is the best thing ever for those with dairy issues!). The cheddar cheese sauce was perfectly delicious, and with the bacon, eggs, sauteed veggies and fries it was pretty much all of my favorite savory things on one plate.
SUNDAY //
Egg Roll in a Bowl / TJ’s frozen spring rolls
notes: this was one of those SUPER easy meals to throw together, which would make it a great weeknight option. I used TJ’s broccoli slaw and omitted the chinese five spice (where do you buy that?). I can see us eating this alot this summer when we need something easy and refreshing 🙂
MONDAY //
Sun-Dried Tomato & Ricotta Meatballs / TJ’s spinach salad kit / Rolls
notes: I used ground chicken here because I prefer the flavor over turkey. These were good, but not necessarily amazing. I think smitten kitchen’s everyday meatballs still reigns supreme. Served over top of TJ’s brown rice and quinoa spaghetti which is a favorite here. Also, if you haven’t had the TJ’s spinach salad kit, you’re missing out!
TUESDAY //
Date Night : Kids had Cheesy Hamburger Noodle Casserole / Peas
WEDNESDAY //
SNOW DAY! : One Pot Autumn Chicken & Butter Toasted Rice Pilaf
On the Side : Biscuits / Roasted Asparagus
notes: snow days call for cozy dinners like this one. I used boneless skinless chicken breasts and TJ’s wild rice mix, omitting the orzo since I couldn’t find GF orzo. In place of the beer, I used a white wine, which was delicious. Omitted the mushrooms and the cider drizzle. All in all this was delicious and will be added to the winter menu repertoire, for sure.
THURSDAY //
Caramelized Pork Tacos w/ Pineapple Cucumber Salsa / TJ’s slaw kit / Chips
notes: omitted the jalapeno and used pork tenderloin instead of loin. I also omitted the fish sauce this time around… it is stinky and kinda turns the kids off of eating the dinner itself 😉 Definitely make the pineapple cucumber salsa. The fresh flavors are so great together. I just warm the tortillas in the microwave rather than stovetop.
