Took most of last week to invest in my business at The Family Narrative in New Orleans. It was an amazing four days learning from some great teachers, talking shop with fellow family photographers and getting inspired with new things to implement in my business. But isn’t the best part of going away, getting to come back home? It was a weekend of meal planning and grocery shopping and laundry and basement cleaning/organizing and just being together. Nothing like those breaks from “real” life that make you appreciate coming back to it all the more!
Meals have been a little scattered the past couple weeks, with my travel… below is a combination of the menus from the past two weeks (filled in with quick and easy frozen dinners, etc while I was gone) :
Halfbaked Harvest Avocado Breakfast Burrito / Fruit Salad
notes: omitted the poblano pepper and used TJ’s tiny potatoes, sauteeing them longer than recommend as I hadn’t pre-cooked them. Oh my goodness, these were delicious. Subbed corn tortilla for me to make them gluten free. Will definitely be adding this recipe to permanent breakfast for dinner rotation.
Best Easy Greek Sheet Pan Chicken Souvlaki + Potatoes / Roasted Green Beans
notes: give me all the greek food — my all-time favorite flavors right here. This is an easy one to throw together, and I always love a one pan dish. The roasted green beans are a great side because they cook at the same temp and can just go in halfway through…
Crispy Baked Black Bean + Sweet Potato Tacos / TJ’s salad kit / chips + salsa
notes: three cheers for another “meatless Monday” winner. My goodness, these were good! You MUST make the avocado salsa… the flavor combo is perfect. Everyone gobbled these up here.
Parmesan Polenta + Pork Raghu / Kale Salad
notes: march is one of those weird months that alternate between tastes of spring and complete winter. Made this on one of those winter nights and it is a bowl of comfort. One of our favs, and a great alternative to spaghetti and meatballs!
Sheet Pan Harissa Chicken w/ Chickpeas + Sweet Potatoes / Roasted Green Beans
notes: I love an unexpected variation to a classic. This was delicious. I used the TJ’s jarred Harissa sauce in place of the seasoning, and it was just the right amount of spice. Again, the green beans were a great pairing because I just stuck them in the oven halfway through. Definitely serve with the greek yogurt and feta and green olives. So many yummy flavors!
Crockpot Split Pea Soup w/ Grilled Cheese Croutons
notes: the perfect Sunday after church lunch! I like to add some diced canadian bacon for a little more flavor/protein. I like to puree everything with my immersion blender before serving for a creamier soup. Made the grilled cheese with some GF bread for myself and we were good to go. Muenster is my cheese of choice for this!
