Took an unplanned hiatus from social media the past couple of weeks due to well, life… Went out of town for a few days, and required the rest of the week to recover from said trip. Have been house hunting, and find that is an emotionally exhausting endeavor. Fighting to trust God and hold the future lightly and to “anticipate His goodness.” My bandwidth is limited. I have not mastered the knack of posting consistently, regardless of what is going on in my life. And you know, I’m ok with that… Still eating. Here’s what…

notes: this was an unusually warm winter day so I scrapped what I had planned and threw chicken on the grill. These potato wedges were SO good. Will definitely make again all year long.

Roasted Harvest Veggie + Coconut Rice Bowls
notes: not a whole lot of squash fans in our house, so I replaced with carrots instead. Trader Joe’s currently has these really fun multi-colored ones. I like to buy TJ’s reduced guilt guacamole and garnish with a dollop, along with sprinkled roasted pecan bits and gorgonzola cheese. Definitely make the coconut rice as prescribed. The flavor combination of all these things can’t be beat. Add some sausages and you have a complete meal. Could easily go meatless too! Forgot how much I love this recipe. Will definitely be adding it to the rotation.

Garlic Butter Pasta Herbed Pork Bolognese + Kale Salad
notes: this is one of my all-time favorite 30 minutes meals. I like to buy the pre-seasoned pork tenderloin at Trader Joe’s. Made the Brown Rice + Quinoa pasta from TJ’s to keep things gluten free. Everything together on the plate is just such a great combo. Add a loaf of crusty bread and you’re good to go. Love this!
