We headed out of town for the weekend to do some major planning/evaluation/dreaming for 2018. Kinda my favorite thing. Looking forward to implementing (and hopefully sticking to!) my game plan for this space… more on that to come. Enjoy this week’s menu! (cover image via : HalfBaked Harvest)
SUNDAY //
Chicken Soup w/ Buttermilk Dumplings
notes: this is an oldie but a goodie recipe from my archives. Using canned biscuit dough for the dumplings makes this an easy one to throw together. Comfort in a bowl right here.
On the Side : Cheese + Crackers, Grapes
MONDAY //
OUT | Kids had Spaghetti & Meatballs
TUESDAY //
Slow Cooker Salsa Verde Honey Lime Chicken Tacos
notes: I’ve decided this is one of my favorite chicken marinade recipes ever. So flavorful. We just had this in regular tortillas (without the flatbread, spices, etc) and it was just as good. Definitely a stand-by for Taco Tuesday.
On the Side : Cilantro Lime Rice
notes: can you say Chipotle copy-cat? This tastes just like the real thing and easy to make too.
WEDNESDAY //
Dinner w/ Friends | Madelyn made Chicken Biscuit Bake
notes: apparently we have been craving comfort food around here lately? Madelyn made this for the kids and they loved it.
THURSDAY //
Orange Teriyaki Beef w/ Pineapple Edamame Fried Rice
notes: This was delicious! I went with stew beef instead of flank steak since it was half the cost, and just diced up some of the larger chunks into more bite-size pieces to make it cook more evenly. Omitted the chinese 5 spice (couldn’t find it) and mushrooms (don’t like them). Definitely make the fried rice. It is so so good. Tip: buy the already cooked frozen rice from Trader Joe’s and it makes the prep that much easier/faster. Definitely will make again. Paired it with steamed snap peas for more green on the plate. Could do something like egg rolls on the side as well.
FRIDAY-SATURDAY //
LANCASTER
