The weather just can’t seem to make up its mind lately… freezing and then we had a couple 60 degree days and now we’re back to freezing. Don’t know whether to pull out my crockpot or fire up the grill! So we did both. Here’s what we ate last week…
SUNDAY //
Turkey Pumpkin Chili + TJ’s Box Cornbread
notes: Crockpot meals on Sundays are kinda my favorite. I love coming home from church to lunch. This chili is a nice alternative to the typical tomato chili. It’s a little more soupy, a little more mild. Very easy to throw in the slow cooker before you head out the door.
On the Side : Cheese Board, Easy Spinach Dip/Chips
notes: We’ve gotten into the delightful routine of having a cheese board spread when we get home from church to snack on while I’m getting the last minute finishes for lunch yesterday. Last week, I changed things up a bit with some spinach dip and chips. Super easy and yum.
MONDAY //
Flu-Fighter Chicken Soup
notes: We’ve been fighting off stuffy noses around here and I’ll take all the help we can get. I wanted to give TJ’s gluten free rice/quinoa spiral noodles a try and they were surprisingly delicious! I omitted the cayenne on the chicken, and it still had a slight kick from the chili powder. This was a hearty bowl of comfort. Definitely will make again.
On the Side : Bread Machine Bread
notes: My sister-in-law shared this amazing homemade bread recipe with me… where you make the dough in the bread machine, then pop the dough into a loaf pan and bake. So good.
TUESDAY //
Soy Lemon Flank Steak + Arugula
notes: I followed these instructions and put the meat to rest in the marinade before we left for the day. The flavor definitely pulled through. We stuck this on the grill just before dinner and it was a great main dish. I did not boil the sauce and drizzle it over. Just serve with baby kale and a balsamic dressing.

WEDNESDAY //
date night | Madelyn made Garlic Parmesan Popcorn Chicken, Fries + Peas
notes: these chicken poppers received rave reviews and looked pretty amazing too. Who knew baked chicken nuggets could be so good?! Will probably see these on the menu again in the near future.
THURSDAY //
Lazy Day Casserole
notes: this is one of our all-time winter favorites. I like to make it with Trader Joe’s Apple Chicken Sausage (2 or 3 packages), sliced lengthways. This time I omitted the fennel, just because they were out at TJ’s, and honestly didn’t miss it. The green beans were the perfect side, as everything could cook together.

Twice Baked Breakfast Potatoes
notes: I guess I was on a baked potato kick this week (2x in one week!). These were really yummy, however I think I needed to get bigger potatoes because when I cracked the eggs over them, there was enough egg for at least two potatoes and it just kinda ended up making a mess everywhere. Oh well. Delicious nonetheless.
On the Side : Fruit Salad, Cinnamon Sugar Mini Pancakes
notes: I like to get TJ’s silver dollar pancakes. Bake as directed, sprinkle generously with cinnamon and sugar after removing from the oven. Re-cover with foil and shake to cover. You’re welcome.
