It has been one of the crazier months of our lives to date… but we are finally finding a new normal and Sawyer’s cast comes off two weeks from today! The kitchen is back in business, the halls are decked out in Christmas joy, and I’m hoping to share some of the goodness of the season here in the coming days. (don’t hold your breath!) 😉

MONDAY //
Sheet Pan Pork Tenderloin + Roasted Veggies
notes: I skipped the turnip and rutabaga and just did brussels, carrots, potatoes and pears. The glaze was delicious and this was super easy to throw together. I doubled for our crew.
TUESDAY //
Brown Sugar Meatloaf, Mashed Potatoes + Oven Roasted Green Beans
notes: an all-time favorite in our house. I omit the ginger and make everything else according to recipe. This is a staple in our house, accompanied by the obligatory mashed potatoes + gravy and roasted green beans.
WEDNESDAY //
date night | a friend brought dinner for the kids <3
THURSDAY //
One Pot Greek Chicken + Orzo, Caesar Salad
notes: the flavors in this are amazing. I accidentally left the second batch of chicken cooking too long and scorched the bottom of my pan so the orzo took on a dark slightly burned hue and it was still a good dinner. I also, just added the chopped cherry tomatoes right into the garlic oil and simmered for a bit before serving over top. I did put this on the side, since it was a little spicy for some of the kids.

Frozen Lasagna, Peas, French Bread

lunch : Pesto Artichoke Grilled Cheese + TJ’s box tomato soup
notes: just such a yummy combination of flavors. I like to get the jarred marinated artichokes from TJ’s and the pesto in their deli section. Also, can never go wrong with their creamy tomato soup.
dinner : Barefoot Contessa Winter Minestrone + Bruschetta Toast
notes: barefoot contessa can do no wrong in my book. I omitted the pasta, but made everything else, as-is. Such a flavorful hearty bowl of soup. Paired perfectly with toast topped with TJ’s bruschetta (also found in the deli section). Enjoy!
