Crockpot Tuscan Sausage and White Bean Ragu
notes: I used the sundried tomato italian sausage from TJ’s and it was tasty. Been loving the gnocchi lately, and having this recipe over it was a nice change from pasta. Again, love the crockpot on busy days like this!
Spinach/Kale Greek Salad
notes: love the flavors in this dressing, and there’s something really refreshing about greek in the winter months.

HalfBaked Harvest Crockpot Chili
notes: this chili continues to be a favorite. I omit the poblano peppers and drain the grease from the meat after browning.

Slow Cooker Pork Loin w/ Apples & Cherries
notes: went with the pitted cherries in the frozen fruit section of TJ’s, and used cider instead of apple juice. All in all this was a pretty basic pork crockpot recipe. Went well with the side of brussels and squash. Felt very “fallish” 🙂
Roasted Brussels & Cinnamon Squash
notes: this was a great side. Again, the pre-cut squash (and pre-seasoned brussels) from TJ’s are a lifesaver in making this an easy dish to throw together and roast. Yummy flavors. Found it didn’t need the additional maple syrup at the end.

Detox Lentil Soup
notes: Yay for the crockpot on Sunday! This was a super easy, throw everything in before church and come home to lunch. Honestly, I was prepared for this to be pretty bland, but it was actually delicious! I used all lentils (TJ’s has them in the pasta section). Definitely buy the pre-cut squash, if you are lazy like me 😉 I used baby spinach instead of the kale and definitely seasoned with additional salt. Completely forgot to add anything at the end, and didn’t miss it. Looking forward to eating all the leftovers for lunch this week!
