Work (and life) is insanely busy right now, so for the next few weeks, slow cooker and easy to make meals are essential to survival 🙂 Maybe you are in the same boat… (why is fall so crazy every year?!) If so, you’re in luck! Found some winners this week. Enjoy!
MONDAY //
Grilled California Avocado Chicken
notes: this was a super easy recipe to throw together that was really flavorful and delicious. I loved the marinade for the chicken. Threw it on the grill and chopped up the avocado and tomato while it was cooking. I stuck the chicken on a cookie sheet and melted the cheese for a couple minutes in the oven. Topped with the avocado mixture and drizzled with balsamic glaze before serving. Everyone approved.
Crispy Sheet Pan Roasted Gnocchi + Veggies
notes: Another easy, super flavorful dish. You can find gnocchi in the pasta section at Trader Joe’s. I skipped the tomatoes and just did onion and peppers. Three cheers for a pretty dish on the plate that everyone wanted to eat.
Mixed Green Salad (TJ’s spinach salad kit is a current fav)
TUESDAY //
Slow Cooker Asian Beef + Broccoli
notes: Oh, how I love slow cooker dinners this time of year. Threw everything in the crockpot in the morning (omitting the ginger), before I left for a busy day of shoots. Skipped the whole straining bit at the end and just added the cornstarch marmalade mixture to the slow cooker after the broccoli had cooked. Definitely recommend cooking this long and low. Get TJ’s frozen rice packs to make this meal even easier.

WEDNESDAY //
DATE NIGHT | Kids had CFA Chicken Bites + Fries
notes: tried to be healthy and bake these instead of frying and it was a complete flop. Better luck next time.
THURSDAY //
Brown Sugar Meatloaf
notes: This is a favorite stand-by for us. Super easy to mix up and throw in the oven where it bakes for a good hour. I like to use whole wheat breadcrumbs instead of the crushed crackers. Serve with mashed or roasted potatoes.
On the Side : Roasted Potatoes, Applesauce, Peas
FRIDAY //
Slow Cooker Parmesan Herb Chicken + Orzo
notes: Omitted the mushrooms, because I’m not a fan; but we all LOVED this recipe. Next time, I would add 1/4-1/2 c. more orzo, because I felt like it was a tad soupy still. Overall, a winner, though, and will definitely make again. Went well with the roasted green beans too.

SUNDAY //
Hamburger Stew
notes: Used one onion, 2 cans tomatoes and omitted the rice. Found it needed more liquid, so I ended up adding 1 c. chicken broth. I would throw in whatever spices fit your fancy for some extra flavor.
