Finally recovered from jet-lag, drowning in fall photography work and getting back into the swing of life. (and on a side note, super sad it’s getting too dark to do my weekly plate of dinner pictures!) Here’s last week’s menu :
MONDAY //
Parmesan Polenta w/ Pork Raghu
notes: this recipe is one of my favorites for a cozy comfort meal. I like to do as she suggests, and squeeze little meatballs from sausage links (this time I used the sundried tomato chicken sausage from TJ’s). Definitely a winner.
Autumn Kale Salad
notes: we went apple picking a few weeks ago and still have an overflow, so I am looking for apple recipes to use every chance I get! this salad is a favorite. great dressing and flavors. I opt to use feta instead of goat cheese, just for preference.
TUESDAY //
Salsa Verde Honey Lime Chicken Tacos
notes: love me a good slow cooker recipe. This chicken marinade the chicken stews in all day is delicious! I omitted the hot sauce, but made everything else as-is (1 c. salsa verde and 1/2 c. honey). It wasn’t too spicy for anyone in my family, which is saying something. Used the whole wheat flatbreads from TJ’s and made them into shells over the oven rack, and it worked great! Will make this again for sure.
On the Side : Roast Corn, Brown Rice

THURSDAY //
Apple Mustard Pork Tenderloin
notes: gonna be honest, this recipe was not much for looks, but it was delicious nonetheless! Can’t go wrong with apples and pork, in my opinion! Also, I used cider instead of apple juice and didn’t have sage, but didn’t miss it.
On the Side : Baked Potatoes w/ All the Fixings, Steamed Broccoli
FRIDAY //
Chicken Shawarma & Sweet Potato Fry Bowls
notes: to be honest, we had an epic meltdown with a certain toddler in our family over not wanting to eat this dinner 😉 Everyone else, though, thoroughly enjoyed the flavor combinations and ate it up! Thank you halfbaked harvest.
