Took an unintended hiatus because we went to California last weekend and well, life took over. I read recently that October is for photographers what April is to accountants and I heartily agree. The past few weeks and the coming month is crazy busy. We get to Thanksgiving and just breathe a collective sigh of relief. Don’t get me wrong, I’m grateful for the work… just full to bursting. Running a little behind on the menu game, so here’s what we ate two weeks ago when the weather was still unseasonably warm 🙂
MONDAY //
Tequila Lime Chicken Sandwiches
notes: Other than omitting the chipotle mayo and grilling the chicken, I made this totally by the recipe. The chicken marinade is so good, and honestly, can you go wrong combining chicken, bacon, cheese & guacamole?! A fav.
On the Side : TJ’s french fries, Roasted Broccoli
TUESDAY //
Fresh Summer Bolognese from the Halfbaked Harvest Cookbook
notes: another winner from the halfbaked harvest cookbook! I couldn’t find the sundried tomato pesto, so I ended up using a jarred Bruschetta from TJ’s — different, I know, but good nonetheless. I also went with her suggestion of subbing half zucchini noodles with the pasta, and for the most part none of the kids noticed 😉
Wedge Salad w/ Buttermilk Black Pepper Dressing
notes: I didn’t use the salad kit for this, but made up my own with gorgonzola, TJ’s sweet glazed pecans and mixed dried berries. The dressing is super yummy. Love this flavor combo.
