MONDAY //
Greek Beef Kabobs w/ Whipped Feta Tzatziki
notes: My only regret is that I found this recipe at the end of summer. The whipped feta tzatziki is a new favorite. (Let’s be honest, give me anything feta and I’ll love it). A big hit all around.
Kale Lime Caesar Salad
notes: I omit the anchovies and make the rest as is. Dressing is delicious and this is a quick one to assemble, that’s a fresh twist on your standard Caesar.
TUESDAY //
Grilled Chicken Taco Bowls w/ Avocado Corn Salsa
notes: If nothing else, make this for the avocado corn salsa which was DELICIOUS. The chicken marinade was great too. Kids had this over brown rice, while James & I had a salad version over a bed of lettuce.

WEDNESDAY //
Date Night | Kids had Cheesy Burger Noodle Casserole + Applesauce
notes: This casserole is a favorite from my mom’s repertoire. Cooke egg noodles according to package directions and layer in the bottom of a 9×13 pan. Brown ground beef with onions, when cooked through, drain and add 1/2 c. marinara sauce, s&p, 1 tsp basil and 1 tsp oregano. Top noodles with ground beef mixture. Combine 1 c. sour cream and 1 c. cottage cheese. Spread over beef. Sprinkle generously with cheddar cheese and bake about 25-30 minutes at 350.
THURSDAY //
Greek Chicken Souvlaki w/ Rice Pilaf
notes: Apparently on a greek kick this week. This is a version that’s great for winter as well as summer. I like to do everything in my grill pan. Omitted the eggplant and pita bread and just served everything over the rice pilaf (which the kids LOVED). Bought vanilla greek yogurt for the tzatziki by accident, and wondered why it was oddly sweet. Oops! All in all, this meal is a favorite.
FRIDAY //
Pizza for Kids | Green Goddess Breakfast Salad for Grown-Ups
notes: Can’t get enough of the flavors in this salad. I like to drain about half the bacon grease off before cooking the onions and sweet potatoes. The dressing is one of the best elements on this plate.

Halfbaked Harvest Beef Chili
notes: Found this chili recipe at the end of last winter, and it was just as good as I remembered. Forgot to thaw my ground beef before church, so I just threw everything in my dutch oven and simmered for awhile after church, while the cornbread cooked. Who knew a bean-less chili could be so satisfyingly good. I omit the poblano peppers and cayenne and find it’s just the right spice for our family.
