Not too many home-cooked meals around here this week… some weeks that’s just how it goes. And I didn’t even take any pictures, so cover shot via : www.hostthetoast.com. Here’s what we ate…
MONDAY //
California Chicken, Veggie + Rice Bowls
notes: this was the very first recipe I ever made from Halfbaked Harvest which opened up the wonderful world of dinner bowls to me. I love how all the elements of this meal come together for a complete meal. We make this as prescribed, usually using TJ’s guacomole and gorgonzola cheese instead of blue, which is a crucial element. I like to the saute the veggies in my grill pan on the stovetop for the sake of ease. This meal is a favorite.

Date Night / Madelyn made Classic Lasagna + Fruit Salad
notes: a good solid lasagna recipe. rave reviews from the kids, and gotta say i was pretty proud of M for pulling this off.

Mediterranean Meatball Gyros
notes: another one of our favorites. I like to make the meatballs myself, but sometimes get the party meatballs from TJ’s freezer section to make this quick and easy. I like to use the frozen naan from TJ’s for the bread, and the pre-made tzatziki. This is one of those meals that can be really quickly pulled together, but tastes amazing.
Zucchini, Feta & Spinach Fritters w/ Garlic Tzatziki
notes: was a little skeptical of how these were going to turn out. The batter seemed a little soupy, but it really worked out wonderfully. I used just enough olive oil to coat the pan, as opposed to the 1/4 cup recommended. My Tzatziki was a little runny, so I would adjust the quantities a bit for next time. All in all these were delicious and well worth the effort. Definitely recommend!
