Another week, come and gone, and just like that we are that much closer to summer’s end 🙁
MONDAY //
Heirloom Tomato Basil Chicken Parmesan Bolognese
notes: this remains one of our favorite easy weeknight dinners. I make as-is except for omitting the red pepper flakes in the sauce. We like to serve over whole wheat spaghetti, and I usually skip the melting fresh mozzarella on top step and just sprinkle with grated parmesan.
On the Side : Smitten Kitchen’s Kale Salad
notes: I totally cheat on this and don’t toast the walnuts or soak the raisins. Possibly we are missing out…
TUESDAY //
Pork Tenderloin (marinated in Trader Joe’s Soyaki sauce)
notes: Soyaki is one of TJ’s best kept secrets. You can find it in the sauce section (bbq, soy, etc). Instantly makes every meat better. We like to grill our pork tenderloin over a long mid-heat.
On the Side : Sweet Corn & Zucchini Pie
notes: I promise you will not even miss the crust on this quiche like pie with all the cheesy goodness involved. I recommend using TJ’s shredded swiss & gruyere blend, and omit the mushrooms for preference. Definitely make this before summer is over.
WEDNESDAY //

THURSDAY //
Balsamic Chicken Salad w/ Lemon Quinoa
notes: it’s not secret how much I love green food and these flavors fit the bill. I used boneless, skinless chicken breasts instead of thighs. Kids had the elements separate, but all together as a salad this was pretty amazing.
On the Side : Watermelon Feta Basil Salad
notes: quite the unexpected flavor combination here but it definitely worked. Fresh yummy side for summertime.
FRIDAY //
Homemade Pizza (adults had grilled chicken caesar salad)
SATURDAY //
Cloud Eggs w/ Bacon & Gruyere
notes: we are getting a little tired of scrambled eggs around here, so I though I would branch out for our Saturday breakfast for dinner and make these cloud eggs. If you can separate eggs, you can make these. Promise. I used the TJ’s swiss/gruyere blend which is just my favorite. Found that I needed to cook more like 5-6 minutes for the second half to thicken up the yolks, but other than that, this recipe is a keeper.
On the Side : Blackberry Coconut Scones, TJ’s frozen hashbrowns
notes: forgot to make the icing, but these scones were a hit regardless. Yum.
SUNDAY //
Southwest BBQ Pork Sliders
notes: by the time Sunday rolls around, we don’t have much left in our fridge and I am ready to take off, which makes easy crockpot meals like this one the best. Instead of Enchilada sauce I used Trader Joe’s new bourbon bbq sauce. And rather than making my own guac (which would definitely have been better) I bought the pre-made stuff, and roasted some corn to mix in. Set out somes slider rolls, pepper jack cheese and you’re set. All in all, this is a great meal for a crowd.
On the Side : Diced Watermelon, TJ’s kale broccoli slaw kit, Sweet Potato Fries
