Got home from camping and hit the ground running with work… summer food still going strong. Here’s what we ate…
MONDAY //
Salmon Souvlaki Bowls
notes : you just can’t go wrong with greek. I make a chicken version for the non-fish eaters among us, use TJ’s israeli pearl couscous and their pre-made Tzatziki. Cooked the veggies on the stovetop in my grill pan, and roasted the fish & chicken in the oven for 15 minutes at 425. Love love this meal.
on the side : Pita Chips & Hummus
TUESDAY //
BBQ Chicken Tacos
notes: one of our favorites. I like to cook the chicken in my grill pan with the BBQ sauce until the sauce starts to caramelize a bit. J & I eat this as a BBQ chicken salad, and the kids have it in tortillas. We buy the frozen sweet corn from TJ’s and roast at 425 for 20-25 minutes with a little olive oil and s&p. Additional toppings include, black beans, shredded cheddar cheese, and a drizzle of ranch dressing.
on the side : Cucumber Avocado Feta Salad, TJ’s Sweet Potato Chips & Peach Salsa
notes: this cuke avocado feta salad is one of our favorites. Comes together in 5 minutes flat and was a great addition to this meal, as it could also serve as a topping for the tacos or salad.
And if you are a Trader Joe’s shopper, you MUST try the combo of the sweet potato chips and the spicy sweet peach salsa. SO GOOD.
WEDNESDAY //
date night | Madelyn made Slow Cooker Mozzarella Stuffed Meatballs over Whole Wheat Spaghetti and Peas
notes: these were a hit with the kids and came together super easy. Love a good slowcooker meal.
THURSDAY //
Balsamic Grilled Chicken Sandwiches
notes: Grilled the chicken, cooked the bacon, and then assembled and popped everything into the oven to melt the cheese (we used Havarti). J & I had this bunless and it was just as tasty. Yay for easy summertime meals.
on the side : Arugula Watermelon Salad, Potato Salad
notes: Omitted the olives in the arugula salad. The flavor combination of the arugula, watermelon, feta and dressing is spot on. Fresh and unexpected. Yum. Potato salad recipe is pretty basic, but quite tasty.

Caramelized Veggies over Polenta w/ TJ’s Sweet Apple Sausages
notes: this is one of those recipe I adapted from Halfbaked Harvest’s crazy multiple steps and it’s one of our favs. I like to use a mixture of whatever veggies I have on hand. This time is was asparagus, zucchini, fresh corn and some heirloom cherry tomatoes. I combine with the veggies with the olive oil, maple syrup, salt and pepper (omitting the chili powder). Then I roast everything on a sheet pan in the oven at 425 for like 40+ minutes. I make the polenta (ie: cornmeal) as recommended, but without the fresh herbs. I’ve never done the whole harissa butter thing, and IMO it doesn’t need it! My favorite accompaniment to complete the meal is TJ’s sweet apple sausage cooked on the grill.
SUNDAY //
Burgers on the grill
notes: sunday afternoons are for super easy meals. Made little burgers using the slider buns from TJ’s. Pulled the leftover sides from the fridge and voila, lunch is served.
