We are getting ready to leave for our annual camping trip on Wednesday, and my head is in hyper list making mode. Here’s last week’s menu and look for a special camping edition next week 🙂
MONDAY //
Pork Caprese Skewers
notes: these are supposed to be salmon caprese skewers, but not being a fish person, I used boneless pork chops instead. Me and the girls threaded them onto toothpicks for a bite-size dinner and the kids had fun eating them that way. This was a yummy combo of flavors. It was also the first time I used TJ’s balsamic glaze and I give it two thumbs up.

Baked Salsa Chicken
notes: this is a recipe my mom made growing up. Great for a crowd and easy to throw together. I marinated the chicken in a TJ’s salad dressing, grilled and then topped with their basic salsa and shredded cheddar. We like to serve with a dollop of sour cream.
On the Side : Spanish Rice and Kale Broccoli Slaw
notes: this kale broccoli slaw salad remains one of my favorite side dishes and pretty much guaranteed to win over the most staunch kale hater. promise.
SATURDAY //
Creamed Spinach Baked Eggs
notes: this is one of those quick and easy dinners you can throw together when you have nothing in the fridge. So hearty and yum.
On the Side : Sausage Links, Hash Browns and TJ’s Cinnamon Churros
SUNDAY //
Crispy Dill Chicken Sandwiches
notes: these were a hit. Can’t go wrong with the combo of chicken, pickles and greek yogurt ranch dressing.
On the Side : TJ’s fries and Lemon Caprese Salad
notes: this lemon caprese salad remains one of my all-time favorite summer sides. It is just so fresh and flavorful, and looks so pretty on the plate too.
