Getting back on track with menu planning… summertime food, you are my favorite.
MONDAY //
BLTA Chicken Salad Lettuce Wraps
notes: This was such a refreshing summer dinner on a day when it was unbearably hot. Made exactly as is, and served on romaine lettuce for the grown-ups and buns for the kids.
On the Side : Watermelon + Shawna’s Summer Salad
notes: these are some pretty large quantities. I halved it across the board (except I used 4 ears of corn), and it was just the right amount for our family as a side. Fresh, flavorful. I am loving the raw fresh corn these days…
TUESDAY //
4th of July / Halfbaked Harvest Grilled Chicken Sandwiches
notes: made these again after a successful dinner last week. They are just so yummy, and worked great for a crowd. I like get the 6 pack of small ciabatta rolls at trader joe’s which make for a more manageable sandwich.
On the Side : Corn Slaw + Potato Salad + Watermelon
WEDNESDAY //
Crockpot Beef Gyros
notes: this recipe made me nervous with just olive oil and no liquid for the meat, but it worked out just fine. Bought the premade tzatziki from Trader Joe’s and used the frozen naan. Sprinkled feta on top and these were a winner for dinner.
On the Side : Fresh Green Bean Salad w/ Balsamic Dressing
notes: this was a great side dish for the gyros. Fresh and good greek flavors.
THURSDAY //
Date Night : Madelyn made Easy Meatball Sliders + Scalloped Potatoes
FRIDAY //
Grilled Chicken w/ White BBQ Sauce
notes: I used chicken breasts instead of thighs, just because of preference. The rub is delicious and the white bbq is a favorite. Best combo.
On the Side : Greek Lemon Garlic Roasted Broccoli Pasta Salad + Cranberry Apple Slaw
notes: made the greek pasta salad as is, and while it was an awful lot of ingredients, it was delicious. Also, this made a ton, we had a whole meal worth of leftovers. The cranberry slaw is a favorite (I like to use TJ’s broccoli slaw) and needs no adjustments.
SATURDAY // Off to Kentucky!
