We are in Kentucky this week getting ready to celebrate my baby sister’s wedding on Saturday, and with the holiday last weekend, I’m behind a week on menu plans. So let’s try to get back on track…

Moroccan-Spiced Chicken Kabobs w/ whipped feta sauce
notes: this dinner is going be a stand-by for us, I just know it. I want to smother everything with that whipped feta sauce. SO GOOD. I marinated the chicken with the spices recommended and plain greek yogurt. Found I needed a little more liquid for the feta sauce in my blender, so I added a splash of milk. We served as suggested, and can’t recommend the naan in the frozen section from Trader Joe’s more highly. It’s our fav.
Not Yet Summer Pasta Salad
notes: Trader Joe’s has a fun tri-color tube pasta that I used in place of the orzo, and made everything else as is. Can’t get enough of those greek flavors. Yes please.

Date Night | Madelyn made pigs in blankets, tater tots + baby carrots w/ ranch
THURSDAY //
Pork Medallions w/ Roasted Nectarines
notes: this is one of those super simple suppers that you can make completely in your cast iron skillet. I like to use Bold Rock granny smith hard apple cider, and double up on the pork to feed our crew.
Fresh Zucchini Corn Salad
notes: I honestly wasn’t sure how this was going to turn out – I mean raw zucchini, squash and corn?! But guys, it was AMAZING and now I just want raw corn in every salad. The lemon vinaigrette really pulls everything together. Even most of the kids were asking for seconds on this?! I omitted the red pepper flakes and used feta instead of goat. This was so quick and easy. LOVE!

Peach Cheddar Burgers
notes: I’m telling you, these are going to be appearing on the menu often.

Sheet Pan Bruschetta Chicken
notes: so easy to throw this together on a Sunday afternoon. Quick & easy & good.
