So many good dinners this week… I didn’t even get a chance to take a picture of them because they were so quickly devoured! Enjoy!
SUNDAY //
Mediterranean Meatball Gyros at the pool
notes: this meal is a favorite. We were out all day, so I cooked the meatballs in the crockpot, and diced up the veggies ahead of time. Bought the tzatziki at Trader Joe’s. Everything was easy to throw in the cooler and transport.
MONDAY //
Crispy Black Bean Tacos w/ Feta & Slaw
notes: this is a favorite super quick and easy meatless weeknight meal. The little kids have their bean tacos with shredded cheddar and sour cream. I like to use the broccoli slaw from TJ’s.
On the Side :
Cucumber Avocado Feta Salad
notes: this was super easy to throw together, and was absolutely delicious. Went perfectly with the black bean tacos. 2 avocados was plenty for me. And now I am putting fresh dill on EVERYTHING.

Peach Cheddar Burgers
notes: I consider myself a bit of a burger connoisseur, as I almost always order them when we go out to eat. That said, these rank pretty high up there as the BEST. Thank you Magnolia Mag! The addition of the BBQ sauce (I used TJ’s carolina gold) was amazing. Also the peach preserves mayo is a must. I was short on time and didn’t end up grilling the peaches, but they were fine just sliced fresh on top. I also skipped the red onion. I used the little ciabatta rolls from TJ’s which were the perfect bread base. Make these guys. You won’t regret it…
On the Side :
Kale Crunch Salad
notes: omitted the cilantro but made everything else as is. The dressing was great – a little tangy sweet. This was a great change of pace side dish (even if most of the kids weren’t a fan)

THURSDAY //
BLT Skewers
notes: Magnolia Mag again hitting it out of the park. I made the grilled cheese with bacon and sliced havarti and then sprinkled fresh dill onto the mayo (I’m telling you, that dill is going on everything these days). Rather than assembling on skewers, I just made a caesar salad with romaine and grape tomatoes and served it alongside the quartered sandwiches. This meal was inhaled. So good and summery.
