Hope your long weekend was wonderful… here’s our menu for last week.
SUNDAY //
Creamed Spinach Baked Eggs
notes: This is a combination of some of my favorite things — creamed spinach, eggs, + feta. It was super easy to throw together in my cast iron skillet, and most of the kids loved it too. Will be adding this to the breakfast rotation.
On the Side : TJ’s chicken breakfast sausage + hashbrowns
MONDAY //
Garlic Herb Meatballs on Whole Wheat Spaghetti
notes: this is one of my all-time favorite meatball recipes. I like to use whatever fresh herbs I have on hand (this time I did sage + parsley). It works great to make a double batch and freeze half for an easy weeknight dinner. I like to serve with TJ’s marinara sauce over whole wheat spaghetti.
Arugula Parmesan Salad w/ Simple Lemon Vinaigrette
notes: this simple salad continues to be a favorite staple around here.
TUESDAY //
Easy Weeknight Chicken Tacos
notes: I omitted the chipotle chili powder from the rub for the chicken, and the adobo chiles from the crema. The kids had these in tortillas, and James + I had everything over a bed of shredded lettuce. The fresh salsa was delicious, as was the lime crema. Have never chopped up chicken with my kitchen aid, but it worked great. Have a feeling this will be a regular taco Tuesday recipe.

WEDNESDAY //
Date Night : Kids had TJ’s frozen orange chicken over jasmine rice
THURSDAY //
Blackened Salmon Burgers w/ Herbed Cream Cheese
notes: I made two versions of this, one with salmon and one with ground chicken (for the non-fish eaters among us). Cooked these up in my non-stick grill pan. Topped with sliced avocado and grilled pineapple and of course the herbed cream cheese. The kids had these on burger buns, while James and I had them on a bed of mixed greens. The flavor combination was wonderful. Well worth the effort on this one for a change from the usual burger…

Arugula + Sharp Cheddar Scramble
notes: this was a tasty update to our usual weekend evening breakfast for dinner. Yum.
