We just returned from a delightfully perfect week at the beach. Back to reality today… here’s what we ate before we left…
MONDAY //
Honey BBQ Chicken + Charred Corn Polenta
notes: Used almond milk for the polenta, as we are trying to do less dairy over here — and to balance out all the cheese! 😉 Also, used TJ’s white frozen corn which was definitely not as tasty as fresh from the cob would have been. This is a good summer “comfort” meal — uses the flavors of the season well.
Oven Roasted Green Beans
notes: This remans our current favorite way to eat green beans. I just make with salt & pepper (omitting the garlic and onion powder)
TUESDAY //
Madelyn Cooks | Crispy Baked Black Bean + Sweet Potato Tacos
notes: I was out working this night, so Madelyn made these on her own. Followed the recipe pretty verbatim. Used flour tortillas instead of corn, and TJ’s pre-made guac. These were SO GOOD. And so satisfying for a meatless entree. Will be seeing these again for future taco tuesdays…

Date Night | Kids had Chicken Patty Sandwiches, Fries + Baby Carrots
THURSDAY //
Honey Coconut Cashew Chicken over Brown Rice
notes: omitted the siracha in the sauce, and made this otherwise as-is. Delicious all around. Kids loved it. We finished it off in one sitting. Will make again!

notes: didn’t have the fresh oregano, but other than that made this as-is. The sliced feta on top was a nice touch. Feel like we’ll be having this a lot this summer.
