Every week I have grand plans of what I am going to share here, and every week life gets the better of me and blogging takes the back burner and the best I can get out is the menu I’ve planned… Such are these days… Here’s what we ate!
MONDAY //
Lasagna Stuffed Peppers w/ Hearty Tomato Sauce
notes: this is a favorite of ours. The sauce is super easy to throw together on a busy weeknight, and makes more than enough for the peppers (I made 8 / 4 peppers halved). I made whole wheat pasta for the kids and the younger ones had the sauce over that instead of the peppers.
Spinach Strawberry Salad w/ Bacon
notes: this was simple to put together and a wonderful flavor medley. The dressing was just the right amount of sweet and tangy.
TUESDAY //
Tequila Lime Chicken Sandwiches w/ Guacamole
notes: this chicken marinade is so so good. Make it just for that. James and I had these sans buns on a bed of the chopped salad (the new southwestern kit from TJ’s is great). I skipped the chipotle mayo. I like to grill the chicken and then toast the buns/melt the cheese on the chicken in the oven for a few minutes before serving. Top with the bacon and guac and you are all set. This is such a winning combo.

WEDNESDAY //

Healthier Cajun Chicken Pasta
notes: this received rave reviews from the kids, and was simple enough that Madelyn could make it start to finish while we were out.
THURSDAY //
Cauliflower Rice Carne Asada Bowls
notes: HalfBaked Harvest never ceases to disappoint with her winning flavor combinations. These bowls were a hit. I made a chicken version as well as the steak and marinated and grilled it all together. Cauliflower rice for us, and made the TJ’s frozen pre-cooked rice for the kids.
Kale + Broccoli Slaw Salad
notes: a good salad/slaw gets me every time and this one is a new favorite. So easy and the dressing was delicious. Had the leftovers for lunch the next day and it was just as good. Definitely will be a summer staple side dish around here…
FRIDAY //
Homemade Pizza for Kids
Grilled MahiMahi Burgers w/ Grapefruit Salad for us
notes: Went super easy on this and just bought the frozen mahi-mahi burgers from TJ’s. Served them on a bed of watercress with the grapefruit and avocado. Used red onion in the dressing. Topped with some crumbled feta. This was a delicious fresh plate of goodness.
SATURDAY //
Balsamic Honey BBQ Sliders
notes: One of our favorites. Love crockpot dinners, especially on the weekends.

Caramelized Pork Tacos w/ Pineapple Salsa
notes: Loved these so much last week they made another appearance 🙂
Kale + Broccoli Slaw Salad
notes: Can’t get enough of this goodness. Enough to make it twice in one week.
Avocado Watermelon + Cucumber Salad
notes: simple, fresh and so pretty on the plate. A fun starter.
Spanish Rice
notes: this is a nice variation of regular white rice. I like to use the zester for the carrot so it’s really fine.
Chocolate Coconut Pie
notes: this was so ridiculously easy, I was a little worried it wasn’t going to turn out. But it did, fabulously. Definitely will be adding this to the repertoire of desserts that seem fancy but are super easy to make. Two thumbs up.
