MONDAY //
One Sheet Pan Teriyaki Chicken
So Madelyn has started cooking dinner one night a week, per her request. It is kind of amazing to have a night off, and kind of amazing that she is growing up to be such an accomplished homemaker <3
TUESDAY //
Caramelized Pork Tacos w/ Pineapple Salsa
notes: omitted the jalapeno, but otherwise made as is and this was a winner. Served with chips + guac and TJ’s broccoli/kale slaw kit. Super yummy and easy to throw together. This will be in the taco rotation from now on.
WEDNESDAY //
Cuban Chicken Black Bean Bowls w/ Mango + Fried Bananas
notes: I can’t believe I’ve never shared this recipe before. It was one of the first Half Baked Harvest recipes I ever made! You definitely need ALL the elements of these bowls to get the full medley of flavors. I omit the chile pepper in the marinade (guys, this marinade – so so good). I also don’t do the whole reserving some of the marinade for a sauce to pour over everything later. I’m sure it would be delicious, just never remember to do it. I like to just do a bowl of TJ’s frozen mango chunks, if they’re out of season. I just leave them out in a bowl while I’m cooking the meal, and they soften enough to add. Fresh mango, is obviously, even better. And the fried bananas and such a fun pop of sweetness with this savory flavor combination. And I used canned black beans, added to the pot with the quinoa just long enough to warm and slightly mash.
Oven Roasted Green Beans
notes: this was a very simple, great way to make frozen green beans actually pretty delicious. I omitted the garlic and onion power and just did salt and pepper.
THURSDAY //
Mediterranean Meatball Gyros
notes: this recipe was on heavy rotation all summer long. Just can’t get enough of the mediterranean flavors when it gets hot out (let’s be honest, really any time of year). I like to double up on the meat for lots of meatballs. I cheat and get TJ’s tzatziki sauce (in the deli section) — it’s just so easy and good! For the flatbread, I use the frozen Naan from TJ’s – works great cut in half for the kids. James and I actually just had this meal sans bread and honestly, I didn’t miss it, which is saying something!
Lemon Caprese Salad
notes: this is a super simple side to throw together that is just so delicious. One of our summertime favs.
