Hey blog, it’s been a while… with spring break travels and hitting the ground running after returning home, blogging has definitely taken the back burner in life. But we are back and done with whole30 (thank you Jesus). It was a great experience, and I’m so glad we did it, but really really glad to be thinking less about what we are eating. It’s funny, though, some habits I’ve carried over from our whole30 experience — like cutting out a lot of grains, using honey instead of sugar, and eating more fruits + veggies — just because it makes me feel better.
Here’s what we ate last week :
MONDAY //
Heirloom Tomato Basil Chicken Parmesan Bolognese
notes: This is such a great weeknight dinner — easy to cook up and so flavorful and delicious. I like to serve it over whole wheat spaghetti, but I also made zoodles for James. Delicious either way. I don’t add the fresh mozzarella at the end — grated parmesan is fine for me.
Kale Salad w/ Pecorino + Walnuts
notes: I was running short on time for this, so I basically omitted all of the prep steps (roasting nuts, soaking raisins) for the add-ins, and just mixed everything up in a bowl once I had massaged the kale w/ olive oil and salt. Honestly, didn’t miss all the other steps. It was still delicious. Think I’ll always make it this way…
TUESDAY //
Trader Joe’s Fish Tacos on Homemade Whole Wheat Tortillas
notes: They did not have the panko tilapia she recommends at my Trader Joe’s, so I just went with the breaded cod fillets. The kids had these on homemade tortillas, and James and I had it over a bed of slaw, topped with a little feta and salsa verde. The flavor combination was delish.
Homemade Slaw
notes: I used TJ’s cruciferous blend (in the salad section). I like to chop it up fine, so it’s not as much of a mouthful. Simple added some homemade mayo, dash of lime juice and some salt and pepper.
Pineapple Cucumber Salad
notes: This was a wonderfully fresh and flavorful side for this meal. Definitely recommend making this whole menu. Made for a great weeknight dinner.

Date Night | Kids Mac n’ Cheese + Chicken Nuggets
THURSDAY //
Turkey BLT Burgers
notes: For the sake of ease, I went with the turkey burgers from TJ’s freezer section. James + I had these in a lettuce wrap. The kids did the flatbread and added cheese. Super quick, easy, good main dish.
Avocado Greek Salad
notes: I have pinned lots of these greek cucumber salads, but this one is hands-down the best one I’ve ever tried. I think it’s the combination of so many different vegetables. The dressing is simple, but delicious. I have a feeling this is going to be a staple side dish for us this summer.

notes: Seriously, I don’t think I could ever get tired of this salad. Definitely one of my favorites ever.
SATURDAY //
Spinach, Feta, Artichoke Breakfast Bake
notes: Love those dinners you can prep early and just pop in the oven when you need it.
