TUESDAY //
Cilantro Lime Chicken w/ Avocado Salsa
notes: this is a recipe I’ve made in the past, pre whole30. the chicken marinade is delicious — so tender and flavorful. I usually cheat and buy Trader Joe’s guac just because it’s so easy (and whole30 approved!).
Carrot Raisin Pineapple Salad
notes: super quick and easy to throw together and kids liked it too, so win win.
Cauliflower Rice/White Rice for kids
notes: the riced cauliflower in the TJ’s produce section is saving me. just saute with a little bit of olive oil for like 5 minutes and it’s a great base. Also, the frozen basmati or jasmine rice in the frozen section for the kids. Love being able to pop a bag in the microwave for perfect rice 3 minutes later. Thank you TJ’s!
WEDNESDAY //
Baked Mahi Mahi w/ Roasted Vegetables
notes: this was delicious and flavorful. I subbed olive oil for the avocado oil. And opted for making my own “italian seasoning” with basil + oregano.
Roast Bacon Apple Brussel Sprouts
notes: this was delicious. definitely will be making again.
Roasted Sweet Potato Fries
notes: sweet potatoes are my new best friend. peel and cut in strips. toss with some olive oil, salt and pepper. roast at 425 for 30-45 minutes.
THURSDAY //
Roast Vegetable Medley w/ Sausage
notes: omitted the mushroooms on this one. it was super easy to throw together. always love having dinners that cook on one pan.
Garlic Roasted Green Beans w/ Shallots + Almonds
notes: another winner of a side dish. have never roasted green beans before, but will definitely be doing so from now on.

notes: I made the Greek Seasoning to have on hand, and it was a tasty addition to the chicken salad. We had it over a bed of salad greens. Added a splash of balsamic vinegar.

notes: the turkey burgers in the frozen section are going to be on rotation here. Today we topped with guacamole, bacon and TJ’s pico de gallo. Served it on a bed of greens to get some extra veggies in.

Suggestion for the meatballs: I just finished 9 months of being dairy free while nursing my son, and I made that same meatball recipe several times using some extra garlic and replacing the parmesan cheese with Braggs Nutritional Yeast. I found this added extra flavor and I actually didn’t miss the cheese at all! I also used an extra clove of garic in the sauce and sprinkled nutritional yeast on top. It sounds weird and doesn’t taste like much on its on, but somehow it helps.
