We savored every bit of sunshine we could last week in preparation for this week’s blizzard.

MONDAY //
Marinated Kale + Chicken Bowls w/ Sundried Tomato Sauce
notes: made this completely as is (aside from doubling the chicken). The sundried tomato sauce was a delicious accent that really took some basic ingredients to another level. We assembled and topped with shaved parmesan. Definitely will make again!
TUESDAY //
Tacos + all the fixings w/ Martha Stewart’s Spanish Rice
WEDNESDAY //
Chicken Shawarma + Sweet Potato Fry Bowls
notes: Give me all the fresh flavors. These bowls were delish. I really liked the marinade for the chicken. Went with israeli couscous for the grain. Topped with sliced cucumbers, kalamata olives and feta. So Yum.
THURSDAY //
date night | kids had spaghetti + meatballs
FRIDAY //
Pizza for kids | Harvest Cobb Salad for Mom + Dad
notes: can you go wrong with this combination of ingredients? I think not.
SATURDAY //
Breakfast Casserole w/ Eggs, Potato + Sausage
notes: I used Trader Joe’s frozen shredded hashbrowns in place of the potatoes in this recipe, which made it super easy to throw together. Great combination of flavors. A keeper.
Whole Grain Strawberry Breakfast Cake
notes: this is a favorite of ours. Hearty and satisfying. I made with half of the maple syrup and didn’t miss a thing. Can be made with any combination of fruit in season. A big hit with the kids.
