Loaded Turkey Meatballs over Whole Wheat Spaghetti
notes: doubled the meat on these, and left the seasonings the same. would probably just omit the red pepper flakes next time. it was a little spicy for some of the kids. Served with TJ’s basil marinara.
Strawberry Avocado Kale Salad
notes: this was a really nice simple, salad. fresh and flavorful. dressing was great too.

BBQ Chicken Cobb Salad/Tacos
notes: these are a favorite. I make all the toppings and the grown-ups assemble as a salad, while the kids have the ingredients wrapped in a flour tortilla w/ a drizzle of ranch dressing. quick, easy. all the yummy flavors.

WEDNESDAY //
Date Night | Spinach Hamburger Loaf w/ Applesauce on the side for kids
notes: this is a simple dinner for the kids or a quick weeknight. I like to use TJ’s pizza dough, found in the deli section. Brown 1 lb. ground beef, and season with salt, pepper, oregano, and a sprinkling of cinnamon (sounds weird, but so good). Spread dough into a large rectangle. Down the center, sprinkle a generous helping of shredded mozzarella, top with some cooked and drained frozen spinach, and the ground beef. Fold dough in at all corners and down the middle to form a large stuffed “loaf”. Bake at 400 for 15-20 minutes, until just turning golden brown. Slice and serve.
THURSDAY //
Pineapple Teriyaki Chicken w/ Sesame Ginger Broccoli
notes: left out the chile pepper and doubled the chicken. Made this in my cast iron skillet so I could just stick it all in the oven. Roasted the broccoli on a separate baking sheet. Served over my new favorite shortcut — TJ’s jasmine rice found in the freezer section. Was a great meal!

White Bean + Turkey Chili
notes: I like to use (2) cans of great northern beans, rather than going the whole soaking route. I also make my own cream of chicken soup based off half of this recipe. We like to serve this over arugula, topped with cheddar cheese and a dollop of sour cream.
