MONDAY //
Crockpot Tuscan Sausage Raghu w/ Buttered Gnocchi
notes: made this just as the recipe prescribes (used sweet italian sausage instead of spicy). It was super easy to throw together monday morning, and was a big hit all around. Would probably do double the gnocchi next time, just so there was more to go around.
On the Side : Steamed Green Beans, French Bread
TUESDAY //
Pork Carnitas Tacos
notes: Got a pork roast at Trader Joe’s planning to use it for another recipe, and realized I didn’t have all the ingredients the morning of. Oops. I ended up just cooking the roast with 1 c. water in the crockpot on low all day. Shredded it with two forks, and transferred to a large skillet with spices (2 tsp. cumin, 2 tsp. chili powder, s+p) to dry it out a bit. Served it in flour tortillas with all the fixings. It was a nice change of pace from the usual ground beef taco tuesday.
On the Side : TJ’s kale slaw (this kit is one of our favs from the salad section), Chips & Guac

Mediterranean Meatball Gyros
notes: found this recipe at the end of last summer and it was instantly one of our favorites. I like to buy the ready made Tzatziki from Trader Joe’s, and double the meatballs. The naan from TJ’s frozen section is perfect for the bread. Such a wonderfully fresh, flavorful meal.
Roasted Garlic-Parmesan Zucchini + Squash
notes: made this with just zucchini + squash (no tomato). Such a good way to eat your veggies.
Greek Tortellini Pasta Salad
notes: used the dry packaged tortellini from TJ’s pasta section and the sliced salami and cut it in strips, instead of the chunks. Forgot to buy italian dressing, but just doused everything with some olive oil and balsamic vinegar and it was great.

Homemade Pizza for Kids
Breakfast Salad w/ Green Goddess Dressing for Adults
notes: guyssssssss! this is probably my favorite dinner salad I’ve ever made. it was seriously so good. the dressing (herby, with a surprisingly wonderful sweetness), the combination of all the flavors. it was all just so so good. definitely will be making this one again and again.

Mediterranean Quinoa Bowls w/ Romesco Sauce
notes: This was a great/easy meal to throw together when we got home from church. Basically just cooking quinoa, chopping up a few veggies and putting it all on a plate. I roasted some fish for some protein with a little olive oil, s+p and dash of lemon juice. The romesco sauce was the perfect finish. All the flavors. YUM.
On the Side : Pita Chips + Hummus
